It travels the length of a party better than anything fried, because nothing is sitting under a lamp — the chef is cooking the next round while the current one is being eaten. Super Bowl parties skew bigger than the rest of our calendar. One chef and one grill handles up to about 25 guests; past that we send a second chef and a second grill so the last plate does not land in the third quarter. The hibachi show — onion volcano, flaming stack, shrimp toss, spatula drums — is included, never an upsell.
