What a dinner for two actually looks like
The chef arrives 20 to 30 minutes early, sets the grill up wherever you want the table to face, and cooks in front of you: steak or filet seared to temperature, scallops, shrimp, hibachi fried rice, vegetables, salad and the house sauces. The whole evening runs about 90 minutes and the pace is yours — there is no next seating and nobody is turning the table. Then the chef breaks down the station and leaves, and the room is yours again for the rest of the night.
Small tables meet the minimum, and that is fine
There is a $550 event minimum, so a table of two pays the minimum rather than a per-head total below it. Plenty of people decide that is the right trade for February 14 once they price a comparable restaurant evening: two prix fixe menus, wine, tax, tip and a car both ways lands in the same territory, and the restaurant version comes with a wait at the bar. Upgrade the proteins, not the room
This is the night for filet mignon, scallops and lobster tail at market price. Because the chef cooks in front of you, each piece goes on the grill when you are ready for it and comes to temperature the way you asked — which is exactly what a kitchen forty feet away on its busiest night of the year cannot promise. Bring your own wine or champagne; we do not supply or serve alcohol.

Hibachi at home is the version where nobody drives, nobody waits for a table and nobody watches a clock.
